North Staffordshire chef changed her diet and took up running to lose almost two stone

A chef from Biddulph has said how much her confidence – and fitness levels – have increased since embarking on a weight loss journey three years ago.

Katie Roberts, 30, has been steadily following the Slimming World plan since 2017. So far she has lost 1st 7lbs and an impressive 14 inches has vanished from her waist.

Since starting her journey, she says her confidence and fitness has improved – and now she favours the fruit bowl over the biscuit tin!

“In school I used to do so much sport, I was hardly ever in the house!” explained Katie. “But then I left school, started working, and the weight just piled on. Quite quickly I went from around 10st to 12st 11lbs.

“I knew I had to do something and make some changes. I didn’t have much confidence and I hadn’t even worn a dress since I was in sixth form.

Katie’s chef jacket is now way too big for her

“I decided to go down to the Slimming World group at St Lawrence’s church in Biddulph. I’d lost my nana two years before and she is buried in that churchyard, so in a way I felt like I had her by my side for support when I went to the group there.

“I honestly think that the hardest step is walking through those doors, because you know you are heading towards a challenge. But once you have done that, there is so much support.

“I told everyone around me that I was starting the plan, and my mum and dad have been brilliant and so supportive – and they’re more than happy to eat Slimming World meals which is brilliant.”

As well as changing her diet, vegetarian Katie also took up running with the Couch to 5K app.

“I like to go running in Congleton Park,” explained Katie. “It was hard at the beginning, but now I can run for 17 minutes without a break. I completed the plan about two weeks ago but I love running now so I will keep going. My top tip would be to remember your bottle of water and focus on what you know you can achieve.

“My weight loss has gone up and down since I started Couch to 5K, but it’s because I’m building muscle and getting stronger, so I don’t mind that at all.”

For Katie, joining her local slimming club has meant that she had made new friends, and massively increased her confidence. She says it’s been both an improvement for her physical and mental wellbeing.

“I have made so many friends through my group, including one person who has become one of my best mates,” explained Katie. “She has done really well and looks absolutely stunning, so she’s a real inspiration to me.

“We do a lot together now and we like to go and see this George Michael tribute act. The first time she asked me if we could book it, I’d lost about a stone, so my confidence was coming back, but I still very much shyed away from the dancefloor and things like that.

“Anyway we decided to go to Cheshire Oaks with another friend to go and find something to wear to the show. We had been in a few shops and in one of them, this dress just jumped out at me.

“It was a real emotional turning point for me because I just fell in love with this dress. I knew I wanted to be able to wear it, and the shop assistant asked if I’d like to try it on.

“I put it on and I felt absolutely amazing and I looked great. I went out in it and the pair of us were the first ones on the dancefloor and the last off.”

Katie continued: “The same friend also won two photoshoots at a place in Leek, and she surprised me with one of them. So I went along and had these photos taken in yet another dress with my make-up done and I just felt amazing.

“My mum and dad didn’t know I was going for the photoshoot, so I gave one of the photos to them and they just said I looked absolutely stunning. They keep the photo out on display so it’s a reminder for me of how far I’ve come every time I look at it, and a constant motivator.”

Katie says she feels ‘100 times better’ for losing the weight, and she’s excited to see where the rest of her journey might take her.

“I’ve been cheffing for 14 years and I used to absolutely fill my chefs top to the brim. Now it’s like a mini dress on me!” she said.

“I feel 100 times better since starting Slimming World, and I can run rings around people now. My appetite has changed and instead of going to the cupboard for a biscuit, I’ll head to the fruit bowl instead.

“I have changed a lot but I am so much more happier in myself now.”
